Recipe: Creamy Salmon Soup with Mustard Greens
Serves: 4-5
Ingredients:
- 1 large onion
- ½ bunch mustard greens
- 2 Tbsp olive oil
- 10 to 12 oz baked salmon
- 1 small daikon radish
- 3 Tbsp lemon to taste
- 1 carrot
- 1 tsp fresh dill, chopped
- 5 cups water
Directions:
- Saute onion with olive oil
- Add daikon radish and carrot, sauté for a few minutes
- Add dill and keep sautéing
- Add mustard greens and sauté another minute
- Add water, bring to boil, and cover. Simmer for 15 minutes
- Transfer soup to the blender, add baked salmon, and blend
- Return to pot and cook 10 more minutes
- Squeeze lemon juice into the soup before serving
- Sprinkle with fresh dill
Optional:
For vegan variation, use 8 oz tofu instead of salmon
